Creamy Pumpkin Alfredo
Creamy Pumpkin Alfredo is a delightful twist on a classic pasta dish, combining the rich flavors of pumpkin and Parmesan for a comforting meal. Begin by bringing salted water to a boil in a medium saucepan and cooking 1 lb of fettuccine pasta al dente according to package directions. Drain the pasta once cooked. While the pasta is cooking, melt ½ stick of butter in a separate saucepan. Add 2 tablespoons of Halladay’s Classic Alfredo Seasoning and stir to combine. Next, whisk in ¾ cup of cooked pumpkin puree and ½ cup of half & half or heavy cream, allowing the mixture to simmer until it is heated through and smooth. Fold in 1 ½ cups of grated Parmesan cheese, whisking until the sauce is well blended and creamy. Finally, toss the cooked pasta with the pumpkin Alfredo sauce and serve immediately for a warm, savory dish that’s perfect for any occasion.
