Peach Glazed Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 17.5 ounces (1 jar) peach preserves (such as Gift Basket Village Country Kitchens Peach Preserves)
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken breast for about 4-5 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. Make the Peach Glaze: In the same skillet, reduce the heat to medium. Add chopped shallot and garlic, saut'e for 1-2 minutes until fragrant.
  4. Combine Ingredients: Pour in the chicken broth and stir to delglaze the pan, scraping up any browned bits. Add the peach preserves, soy sauce, Dijon mustard, and apple cider vinegar. Stir well to combine and bring to a simmer.
  5. Simmer and Glaze: Let the sauce simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly and coats the back of a spoon
  6. Finish Cooking: Return the chicken breast to the skillet, spooning the peach glaze over each piece. Continut to cook for another 2-3 minutes until the chicken is heated through and fully coated with the glaze.
  7. Serve: Remove from heat. Garnish with choped fresh parsely if desired. Serve the Peach Glazed Chicken hot, accompanied by rice, quinoa, or a side of vegetables.

Peach Glazed Salmon Recipe

Ingredients:

  • 4 salmon fillets (about 6 ounces each), skin-on or skinless
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Peach Glaze:

  • 17.5 ounces (1 jar) Gift Basket Village Country Kitchens Peach Preserves
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Fresh parsley or green onions, chopped (for garnish, optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  3. Make the Peach Glaze: In a small saucepan, combine the Gift Basket Village Country Kitchens Peach Preserves, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 5-7 minutes, or until slightly thickened.
  4. Glaze the Salmon: Place the salmon fillets on the prepared baking sheet. Brush each fillet generously with the peach glaze, reserving some for later use.
  5. Bake the Salmon: Bake the salmon in the preheated oven for 12-15 minutes, depending on the thickness of the fillets, or until the salmon is cooked through and flakes easily with a fork.
  6. Broil (Optional): If desired, you can turn the oven to broil during the last 1-2 minutes of cooking to caramelize the glaze slightly.
  7. Serve: Remove the salmon from the oven. Brush with any remaining peach glaze. Garnish with chopped parsley or green onions, if desired.
  8. Enjoy: Serve the Peach Glazed Salmon hot, accompanied by rice, quinoa, or steamed vegetables.

Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 can (15 ounces) sliced peaches in juice, drained (reserve juice for later use)
  • 17.5 ounces (1 jar) Gift Basket Village Country Kitchens Peach Preserves
  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions:

  1. Prepare the Peach Topping: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan. In a small bowl, mix melted butter, brown sugar, cinnamon, nutmeg, and salt until well combined. Spread this mixture evenly over the bottom of the prepared cake pan. Arrange the drained sliced peaches in a single layer over the brown sugar mixture. Set aside.

  3. Combine and Mix: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  4. Add Peach Preserves: Gently fold in the Gift Basket Village Country Kitchens Peach Preserves into the cake batter. Be careful not to overmix.
  5. Assemble and Bake: Carefully spoon the cake batter over the peaches in the cake pan, spreading it evenly.
  6. Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Cool and Invert: Allow the cake to cool in the pan for 10 minutes. Then, place a serving plate over the top of the cake pan and carefully invert the cake onto the plate. Slowly lift off the cake pan.
  8. Serve: Slice and serve the Peach Upside-Down Cake warm or at room temperature. Enjoy the moist, flavorful cake with the sweet peach topping!
