Easy Home Made Creamy Potato Soup

This is an easy creamy potato soup recipe that you can make in a crock pot and will be ready to eat when you get home from work or after you get home from a full day of activities. This soup is made with simple ingredients you can find anywhere, and it's perfect for a chilly winter day!

Creamy Cheesy Potato Soup

For a soup that is comforting and filling on a cold day you can't beat a good potato soup recipe.

This is a great creamy soup that has all the flavor of a loaded baked potato and is very satisfying that can be prepared and left to simmer in your favorite crock pot.

Just add all the ingredients and let it cook until the potatoes are fork tender. Once it is done and ready to serve you can add your favorite toppings, such as bacon bits, copped green onions, and add a little more of the mild shredded cheddar cheese in the bowl.

Ingredients you will need for Creamy Potato Soup

  • Cubed Southern Style Hashbrowns - These are great because they can be purchased at your local store and come in a bag ready to serve.
  • Cream Cheese - This gives the soup a creamy smooth rich flavor.
  • Chicken Broth - You can make your own or get it from the local store and it will add a lot of great flavor to the soup.
  • Onion Powder - Adds some spice. Use only enough to your liking.
  • Garlic Powder - Adds some flavor but if you don't like garlic just leave it out it will not effect the soup at all.
  • Mild Cheddar Cheese - Use shredded cheese this gives it the cheesy flavor of a loaded baked potato.
  • Black Pepper - Pepper to you taste.

Tip When Preparing

  • If you feel the soup is too thick, just add more chicken broth until it reaches the desired consistency. 
  • You can customize this soup easily. If you don’t like a spice or seasoning, leave it out or add in something else that you like better like red pepper flakes or hot sauce. Get creative and make it your own!

You can put your cooled soup in an airtight container in the fridge for up to 5 days.

Delicious Creamy Cheesy Potato Soup

This potato soup can also be frozen for up to six months. Let the soup cool completely before putting it in the freezer-safe container. When ready to eat, let it thaw overnight in the fridge before reheating.

Reheat individual portions in the microwave or reheat the entire pot on the stove over low heat. You may need to add extra broth or you can add just a little half and half if it has become too thick.

PREP TIME - Approximately 15 mins
COOK TIME - 3-4 hours on high or 5-6 hours on low
TOTAL TIME - 3-6 hours


1 32 oz package of frozen cubed Southern Style Hash Browns

1 8oz block of Cream Cheese

4 cups of Chicken Broth

1/4 tsp of Onion Powder

1/4 tsp of Garlic Powder

8 oz of Shredded Mild Cheddar Cheese

Black Pepper to taste


  • Add the Hash Brown in the Crock Pot
  • Next add the 8 ounces of Cream Cheese
  • Add in the 4 cups of Chicken Broth
  • Add 1/4 tsp of Onion Powder
  • Add 1/4 tsp of Garlic Powder
  • Top with the Shredded Mild Cheddar Cheese
  • Add the Black Pepper to taste
  • Cook on Low for 5-6 hours or on High for 3-4 hours
  • Cook until the potatoes are fork tender.

Once you serve up the soup in a bowl add some bacon bits and top with fresh chopped green onions. Enjoy!
