WHY YOU’LL LOVE THIS RECIPE

  • It's like a big, warm hug in a bowl! The combination of savory ground beef, tender potatoes, and creamy cheese is a perfect combination.
  • This recipe is made entirely in the crock pot, so you can set it and forget it. It's perfect for busy weeknights when you don't have a lot of time to spend in the kitchen.
  • You can add in extra veggies like mushrooms or spinach or adjust the spices to your liking. It's a great way to use up ingredients you already have in your pantry and fridge.
  • This soup is even better the next day so you can enjoy it for lunch or dinner throughout the week.

INGREDIENTS YOU’LL NEED

  • Ground Beef - The main protein source that provides the classic cheeseburger flavor. When browned, it adds a savory, meaty flavor to the soup.
  • Petite Red Potatoes - The potatoes in this recipe add a heartiness to the soup and become tender and creamy when cooked in the broth.
  • Butter - Used to sauté the soup vegetables before adding them to the crock pot to help release their flavor.
  • Chicken Broth - The chicken broth serves as the base for the soup and provides a delicious savory chicken flavor.
  • Soup Vegetables (Carrot, Celery, Onion) - The mirepoix adds a delicious combination of aromatic flavor and textures to the soup.
  • Italian Seasoning - Adds a combination of herbs and spices, such as basil, oregano, and thyme, that help to enhance the overall flavor of the soup.
  • Salt & Pepper - Help to season the soup and bring out the flavors of the other ingredients.
  • Cornstarch - Used as a thickener for the soup. It helps to create a creamy and velvety texture by binding the liquid ingredients together.
  • Milk - Added to the soup to make it creamy and rich.
  • Shredded Cheddar - Adds a deliciously creamy and cheesy flavor to the soup. It melts into the broth and helps to thicken it up even more.
  • Sour Cream - Gives the soup a tangy and creamy flavor that blends in with the bold flavors of the soup.

HOW TO MAKE CHEESEBURGER SOUP IN THE CROCK POT

Prepare the ground beef: Place the ground beef in a large skillet. Turn the heat to medium. Break up with a spatula and cook until browned. Drain the excess grease, then add it to the bottom of a 6-quart crock pot.

Add vegetables: To the ground beef, add the red potatoes, butter, chicken broth, onion, carrots, celery, Italian seasoning, salt, and black pepper. Stir until well combined.

Cover and cook: Add the lid to the top and cook for 7½ hours on HIGH or for 3½ hours on LOW.

Assemble the liquid: Make a cornstarch slurry by whisking the milk with the cornstarch, then pour it into the crock pot Add the cheese and sour cream, then mix until combined. Cover and cook for an additional 30 minutes. Stir before serving. Enjoy!

RECIPE TIPS

  • Ground beef in a separate skillet before adding it to the crock pot. This helps to create a more complex and savory flavor in the soup and also helps to remove any excess fat from the meat.
  • To save time, prep the vegetables and brown the meat the night before. Then, in the morning, simply add everything to the crock pot and let it cook all day.
  • To make the soup even creamier, you can use half-and-half or heavy cream instead of milk. Just be sure to add it towards the end of the cooking time so that it doesn't curdle.
  • If you're short on time, you can cook the soup on high heat for 3-4 hours instead of low heat for 7-8 hours. However, keep in mind that the longer cooking time on low heat helps to develop the flavors more fully.

VARIATIONS

  • For a spicy kick, add some diced jalapeños or red pepper flakes to the soup. You could also add a dash of hot sauce or cayenne pepper to the broth.
  • For a more vegetable-heavy soup, add some chopped mushrooms, zucchini, or spinach.
  • To make the soup more filling, add some cooked pasta or rice.
  • For a different flavor profile, swap out the Italian seasoning for some taco seasoning. This will give the soup a more Mexican-inspired flavor and pairs well with the ground beef and cheese.
  • Use ground turkey or chicken instead of beef for a lighter soup that is still high in protein.

STORING & FREEZING

Storing: Transfer cooled leftovers to an airtight container and refrigerate it for up to four days. When you're ready to reheat it, simply pour it into a saucepan and heat it over medium heat until it's warmed through.

Freezing: Allow the soup to cool completely before transferring it to a freezer-safe container or resealable freezer bag. It will keep well in the freezer for up to three months. You may need to add a bit of extra milk or broth to thin out the soup, as it may thicken during freezing.
